Cinnamon nitrile, also known as cinnamaldehyde nitrile. It contains benzene ring and nitrile groups in its structure.
Cinnamon nitrile is a colorless liquid with a spicy aroma. The density of cinnamon nitrile is 1.092 g/cm³. It can be dissolved in organic solvents such as ether, ethanol, and methylene chloride, but it is less soluble in water.
Cinnamon nitrile is stable in air and is not easily oxidized. It can also tolerate some degree of heat and light. Under alkaline conditions, cinnamon nitrile may be hydrolyzed, producing the corresponding acids and salts.
Its aroma is similar to cinnamaldehyde and is often used to enhance the cinnamon aroma in spices.
